This is our 4th coffee from Juan Puerta!

This coffee begins with carefully selected cherries harvested at peak ripeness and rested in barrels for 24 hours to enhance sweetness and complexity. The cherries are then floated to separate the highest-density fruit before pulping.

A 48-hour co-fermentation follows, featuring fresh mandarin, glucose, natural mandarin extract, and rose petals, creating an expressive cup with vibrant citrus aromatics and delicate floral notes. Following fermentation, the coffee is thoroughly washed to preserve clarity and balance.

The beans undergo two days of sun drying on patios before completing a slow, controlled drying process in silos until they reach the ideal moisture content for long-term stability and exceptional quality.
