What’s in the cup? We roasted this just past a true medium roast which seemed to bring out the characteristics and flavor of this coffee best. Full bodied yet complex with notes of Pecan, Plum, Caramel & Milk Chocolate. Since tasting notes are quite subjective, we are sure you will find your own adventure of tasting notes in this complex cup!

About this coffee: Say hello to Ixlama(pronounced Ish-Lama) from the department of Huehuetenango of Guatemala! This coffee was sourced through our friends at Balzac Brothers and their 50+ year relationship with Transcafe.

Transcafe is responsible for supporting several smallholder farmers across Guatemala and helping them process their coffee. The Ixlama coffee specifically came from the work and dedication of around 120 family producers from the San Pedro Nexta and La Libertad munincipalities of Guatemala. This coffee is a combination of Bourbon and Caturra varietals and was grown between 1,524 to 1,830 MASL.

The Mill is near the town of Todos Santos at Caserio Teogal Aldea San Martin. The coffee was sun-dried on cement patios for 4 days and then placed in coffee driers called “Guardiolas.” These were patented by a Guatemala resident all the way back in 1872! After that, they are sorted by color via computer and separated by density mechanically. This results in a coffee that can be dried and roasted consistently for a clean and complex cup.
